Sodium Metabisulfite is a popular wine additive and sanitizer used to inhibit wild yeasts and bacteria in fresh fruit prior to fermentation.
It can also be used after fermentation for its anti-oxidant and preservative effects. In white wines, it preserve color and prevents oxidative browning. The addition of sulfites is considered to improve the overall flavor of wine and preserve its delicate qualities.
As a added bonus it is also a safe and effective sanitizing solution for plastic, glass and metal surfaces.
To kill wild yeast: 1/4 teaspoon to 22 L Must
To use as sanitizer: 57 grams to 4.5 L of Water.
