Cloves in Home Brewing are one of the most potent, warming spices used in home brewing. They deliver a powerful punch of spicy warmth, subtle sweetness, and a deeply complex aroma driven by eugenol—the core essential oil found in the spice. Dosage & Usage Guidelines
For a standard 19-litre (5-gallon) batch, less is always more. A single whole clove goes a remarkably long way.
- Late Kettle Boil (Last 5–10 minutes)2 to 4 whole buds. Toss the whole cloves directly into the boiling wort. Boiling sanitises the spice and extracts balanced flavor compounds.
- Secondary Infusion (Dry-spicing / Aging)1 to 2 whole buds. Lightly crush the buds and drop them into a sanitised mesh bag. Steep during secondary conditioning for 2–4 days, tasting daily until the desired profile is hit.
- Vodka Tincture (Safest Method)3 to 4 whole buds. Soak lightly crushed cloves in a small splash of vodka for 1–2 weeks. Strain out the liquid and dose it directly into your bottling bucket or keg to taste
