German ale brewer’s yeast producing subtle fermentation character, clean and crisp. Forms a large firm foam head and presents a very good ability to stay in suspension during fermentation. Ideal for delicate beers, traditional German styles, and heavily hopped beers.

Pro-Tips for Brewing with K-97

Massive Krausen: K-97 is famous for forming a very large, firm head (krausen) during active fermentation. Make sure your fermenter has plenty of headspace or use a blow-off tube to prevent messy overflows.

Biotransformation Powerhouse: According to Fermentis, K-97 offers the highest potential for hop biotransformation in their entire dry yeast lineup. It unlocks aromatic bound esters in hop oils, enhancing juicy and fruit-forward notes when dry-hopping.

Managing Haze: Because its sedimentation is quite slow, your beer may remain cloudy or yeasty-tasting for a long period after fermentation concludes. If you are using it for a clean style like a Kölsch rather than a hazy beer, you will likely need to use fining agents (like gelatin) or subject the beer to extended cold conditioning (cold crashing) to get it bright.
