Bentonite clay is a highly absorbent, volcanic ash-based fining agent widely used by South African brewers, winemakers, and distillers to eliminate cloudiness and achieve excellent beverage clarity. It carries a strong negative electrical charge that functions like a magnet, automatically attracting and binding to the positively charged proteins suspended in the liquid. Once attached, these bound particles become too heavy to stay floating and sink to the bottom of the fermenter, permanently stripping out the core proteins responsible for stubborn haze.

  • Preparation and Application InstructionsHydration Process: Fully blend 25g of clay into 375ml of warm water (a 1:15 ratio). Let this mixture rest for 30 minutes to 24 hours so it expands fully.
  • Dosage: use 30 - 80 grams per 100 L
  • Tool Precautions: Use only plastic, glass, or ceramic tools. Metal reacts with the clay and destroys the negative electrical charge required to attract haze proteins.
  • Fermentation Timing: Add the hydrated mixture directly during active fermentation for wine or mead. The moving CO₂ bubbles naturally circulate the clay, eliminating the need to stir.
  • Dry Addition Warning: Never add dry powder directly into your fermenter. The clay will absorb liquid instantly and turn into useless mud clumps at the bottom.
